This black bean soup recipe is pretty basic, a humble and plain offering, but it is also very worthwhile. It is nutritious, inexpensive, and forgiving, and comes together easily for a crowd pleasing lunch or simple supper. Using soaked, dried beans makes it even better, but canned beans are just fine.
Black bean and sausage soup
Black beans, sausage and just the right amount of spiciness make this a crowd pleasing soup
In large pan, heat oil over medium heat.
Cook sausage, onion, garlic and peppers until browned. Add spices and cook about ten minutes, or until vegetables are softened.
Add broth and beans and simmer, partially covered, approximately fifteen minutes.
Mash beans or run through blender until you get the desired consistency. Serve with cheese and sour cream if desired.
