Irish cream chocolate coffee bars

After the corned beef and cabbage, Guinness and soda bread, a sweet little pick-me-up is in order… This delicious cookie bar will hit the spot, as it combines a trifecta of most agreeable flavors, chocolate,  coffee and Irish Cream liqueur into a fudgy brownie-like treat.

Perfect for St. Patrick's Day, or any other time you want a sweet bite of chocolate, coffee and Irish cream

Instructions
  1. Preheat the oven to 350. Line a 9" x 13" baking pan with parchment paper of foil, and spray with cooking spray.
  2. In a large bowl, combine the flour, cocoa powder, sugars and salt. Stir in the melted butter, Irish cream and 3 eggs. Mix well, until smooth.
  3. Add chocolate chips. Spread into the prepared baking pan.
  4. In a standing mixer, beat the cream cheese until smooth and light. Add 3 eggs, powdered sugar and espresso powder. Mix well. Spread over the brownie batter.
  5. Bake for 55 minutes, until center is set. The top should be golden and crackly. Cool for a few minutes on a rack and then chill until cold.
  6. Cut into bars and dust with cocoa powder if desired.
