After the corned beef and cabbage, Guinness and soda bread, a sweet little pick-me-up is in order… This delicious cookie bar will hit the spot, as it combines a trifecta of most agreeable flavors, chocolate, coffee and Irish Cream liqueur into a fudgy brownie-like treat.

Ingredients
- 1 1/4 cups flour
- 1 1/4 cups` cocoa powder
- 1 cup sugar
- 1 cup brown sugar
- 1 tsp. sea salt
- 1 cup butter melted
- 3/4 cups Irish Cream liqueur
- 6 eggs
- 1/2 cup chocolate chips
- 8 oz. cream cheese
- 4 cups powdered sugar
- 1 tbsp. espresso powder

Instructions
- Preheat the oven to 350. Line a 9" x 13" baking pan with parchment paper of foil, and spray with cooking spray.
- In a large bowl, combine the flour, cocoa powder, sugars and salt. Stir in the melted butter, Irish cream and 3 eggs. Mix well, until smooth.
- Add chocolate chips. Spread into the prepared baking pan.
- In a standing mixer, beat the cream cheese until smooth and light. Add 3 eggs, powdered sugar and espresso powder. Mix well. Spread over the brownie batter.
- Bake for 55 minutes, until center is set. The top should be golden and crackly. Cool for a few minutes on a rack and then chill until cold.
- Cut into bars and dust with cocoa powder if desired.
