Jammin’ Jam bars

“…we’re jammin’ and I hope you like jammin’ too…”  **

Those were the words that accompanied the baking of these very tasty and very jammy cookie bars.  They are just delicious, with a good amount of  jam (your choice)  sandwiched between  buttery shortbread with subtle almond, nutmeg and clove flavors.  For simplicity the top crust is pressed on, giving it a homey, fruit cobbler sort of effect, but it could easily be fancified with an elegant lattice top or other touch.  Also, use good quality jam!

Buttery shortbread with almond, nutmeg and clove flavors is topped with yummy jam and more shortbread
  1. Preheat oven to 350. Line 9" x 13" baking pan with parchment paper and grease lightly.
  2. With electric mixer, cream butter, sugar, vanilla and extracts. Add in flour, baking powder, nutmeg, cloves and salt.
  3. Press approximately half of better in bottom of prepared pan.  Cover with the jam. Drop remaining batter on top of jam
  4. Bake for about 25 minutes.

**Of course Bob Marley had loftier ideals when he wrote those words, and it is sad and sobering to realize the fight for equality wasn't won in his lifetime.  Maybe some strides could be made during the lifetime of  Carlos.
