Ingredients
- 1 pound boneless chicken breasts or thighs chopped fine
- 1 tsp ground ginger
- 1/4 tsp. cayenne pepper
- salt and pepper to taste
- 2 tbsp. olive oil
- 1 red pepper diced
- 1 cup onion diced
- 2 garlic cloves minced
- 2 tbsp. gingerroot minced or grated
- 2 tbsp. soy sauce
- 1 tsp. honey
- 2 tbsp. lime juice
- 1/4 cup cilantro chopped
- 1 cup mango diced
- lettuce leaves for serving

Instructions
- Stir together ground ginger, cayenne, salt and pepper and toss with chicken.
- Heat oil in large skillet and cook onion, red pepper and chicken until chicken is cooked through. Add garlic, gingerroot, soy sauce, honey and lime juice and cook an additional minute or two.
- Remove from heat and stir in mango and cilantro. Serve with lettuce leaves.
