Mango-ginger chicken lettuce wraps
This is a versatile filling for lettuce or tortilla wraps, and also delicious over rice or in a salad.
Stir together ground ginger, cayenne, salt and pepper and toss with chicken.
Heat oil in large skillet and cook onion, red pepper and chicken until chicken is cooked through. Add garlic, gingerroot, soy sauce, honey and lime juice and cook an additional minute or two.
Remove from heat and stir in mango and cilantro. Serve with lettuce leaves.
