Mango-ginger chicken lettuce wraps

Quick, easy, healthy and versatile– what’s not to love about that?  Diced and spiced chicken is cooked with garlic, ginger, onions and peppers, then tossed with mango and cilantro for a tasty lettuce wrap filling.  It is equally nice in a tortilla wrap, over rice or tossed in a salad.  Try it with coconut rice for an escapist Caribbean vibe…

Instructions
  1. Stir together ground ginger, cayenne, salt and pepper and toss with chicken.
  2. Heat oil in large skillet and cook onion, red pepper and chicken until chicken is cooked through. Add garlic, gingerroot, soy sauce, honey and lime juice and cook an additional minute or two.
  3. Remove from heat and stir in mango and cilantro. Serve with lettuce leaves.
