Margarita Chicken with Mango Salsa

Ahhh, summertime.  Barbecues,  patio dining, fruity cocktails, smoky grilled food, and a recipe for you which can combine all of these delicious attributes.  This healthy and simple recipe requires marinating time, but after that, it comes together in a jiffy.   Chicken breasts are marinated in lime, tequila, garlic and spices,  glazed with honey and topped with a citrus mango salsa.  Serve it with a cilantro-lime rice pilaf, and a spinach salad and enjoy!

  1. Marinade: Combine all the marinade ingredients in a large bowl or large resealable plastic bag. Add the chicken pieces and coat it well with the marinade. Cover (if in bowl) and refrigerate for four hours.
  2. Glaze: Combine ingredients in small bowl and set aside.
  3. Salsa: In a medium, non reactive bowl, combine all the salsa ingredients. Cover and chill until ready to use.
  4. Margarita chicken: Remove chicken from marinade. You can either grill it on a barbecue or bake it. If grilling, brush with glaze, and cook about 6 minutes per side, or until temperature is 165 degrees.
  5. If baking, preheat oven to 350. Grease baking sheet, place chicken on sheet, and brush with glaze. Bake approximately 20 minutes or until cooked through (165).
  6. Arrange chicken on platter and top with mango salsa.
