Ahhh, summertime. Barbecues, patio dining, fruity cocktails, smoky grilled food, and a recipe for you which can combine all of these delicious attributes. This healthy and simple recipe requires marinating time, but after that, it comes together in a jiffy. Chicken breasts are marinated in lime, tequila, garlic and spices, glazed with honey and topped with a citrus mango salsa. Serve it with a cilantro-lime rice pilaf, and a spinach salad and enjoy!

Ingredients
- CHICKEN:
- 1/2 cup tequila
- 4 tbsp. lime juice (2 limes)
- 1 tbsp. lime zest (from 2 limes)
- 2 cloves garlic minced
- 1 tbsp. ground cumin
- 1 tsp. paprika
- 1 tsp. salt
- 1 tsp. soy sauce
- 1 tbsp. chili powder
- 1/2 tsp. black pepper
- 1/4 cup olive oil
- 2 pounds boneless, skinless chicken breasts pounded thin
- GLAZE:
- 4 tbsp. honey
- 2 tbsp. lime juice (1 lime)
- MANGO SALSA:
- 2 ripe mangoes diced
- 1 cup tomatoes diced
- 1 avocado diced
- 1/4 cup red onion diced
- 2 tbsp. lemon juice (1 lemon)
- 1 tbsp. lemon zest (1 lemon)
- 1/2 jalapeno minced
- 1/2 cup cilantro minced

Instructions
- Marinade: Combine all the marinade ingredients in a large bowl or large resealable plastic bag. Add the chicken pieces and coat it well with the marinade. Cover (if in bowl) and refrigerate for four hours.
- Glaze: Combine ingredients in small bowl and set aside.
- Salsa: In a medium, non reactive bowl, combine all the salsa ingredients. Cover and chill until ready to use.
- Margarita chicken: Remove chicken from marinade. You can either grill it on a barbecue or bake it. If grilling, brush with glaze, and cook about 6 minutes per side, or until temperature is 165 degrees.
- If baking, preheat oven to 350. Grease baking sheet, place chicken on sheet, and brush with glaze. Bake approximately 20 minutes or until cooked through (165).
- Arrange chicken on platter and top with mango salsa.
