Not your mom’s meatloaf
This healthy but tasty meatloaf uses dried fruit and preserves, Dijon mustard and sage for flavor.

  1. Preheat oven to 425. Cover baking sheet with foil and spray with cooking spray.
  2. Heat olive oil in small pan and add chopped onion. Saute until golden. Add minced garlic and cook until golden. Remove from heat and cool slightly.
  3. In large bowl, combine ground turkey, breadcrumbs, chopped fruits, egg, onion, garlic, 1 tbsp. mustard, sage, salt and pepper. Form into small oval loaves.
  4. Combine preserves and remaining mustard in a small bowl. ( Microwave it if jam is too thick).
  5. Bake loaves for 15 minutes. Remove from oven and brush with preserve mixture. Return to oven and continue to bake, about 15 more minutes\, or until thermometer registers 160.
