Roast beef, Swiss cheese, arugula and onion jam sandwiches

Today is National sandwich day!  That’s right, November 3 is the day to enjoy your favorite sandwich,  discover a new one or whip of a batch of both.  Here is a very fine offering for your consideration:  Roast beef, Swiss cheese, arugula and onion jam sandwiches. 

This is a delicious combination of flavors; the slight sweetness of the caramelized onion jam, and nuttiness of the cheese is complemented by the bitter arugula.  The components are also quite versatile.      Put them inside a tortilla and add cream cheese and you have a really superior wrap.  In a slider bun or biscuit, you will have a fantastic hearty appetizer, and of course, when piled high on a good wholegrain sandwich bread you have a hard- to- resist lunch.  You can buy prepared onion jam or marmalade or you can make your own quite simply.  Here’s a great recipe: caramelized onion jam.     https://frillsandfood.com/recipe/caramelized-onion-jam/
