Ingredients
- 2 lb. salmon cooked and cut into bite size pieces
- 3 avocado peeled, pitted and chopped
- 2 cups blueberries
- 2 cups Gorgonzola cheese crumbled
- 2 cups walnuts coarsely chopped
- 1 red onion very thinly sliced
- 2 tbsp. lemon juice
- 2 tsp. Dijon mustard
- 2 tbsp. white wine vinegar
- 1 cloves garlic minced
- 3/4 cup olive oil
- 8 cups mixed greens or spinach

Instructions
- Whisk lemon juice, Dijon mustard, vinegar, and garlic in a medium bowl. Gradually whisk in oil. Season to taste with salt and pepper.
- Gently combine all ingredients in a large bowl. Add dressing just before serving.
