Summer flavors, fall nights…Pork Tenderloin with fruit salsa

Meal planning in September is contradictory sometimes.  On one hand, there is the return to hectic school nights and the need for quick and easy dinner ideas.  But sometimes  glorious summer weather remains, and fall food just sounds heavy and hearty and maybe kind of horrible.  So here is a  recipe that manages to combine wonderful summer flavors– with ingredients still readily available– and also comes together with nice speed and simplicity.

You will need a pork tenderloin to coat in spices and put into the fridge for hours or overnight.  The salsa ingredients can be prepped ahead of time, or while the pork roasts, or even easier,  just purchase some nice salsa.

Before serving, just place pork on to greens, serve with rice and top with the salsa for a little tropical flavor on an autumn day.

  1. Combine mango, pepper and onion in bowl. In another bowl combine lime juice, olive oil, cumin, salt and pepper and whisk together. Mix into salsa. Add cilantro and mix well. Let stand at room temperature while pork cooks.
  2. Combine spices and rub all over meat. Cover and refrigerate up to overnight. Preheat oven to 425. Place pork on lightly oiled roasting pan and roast uncovered for 25 to 35 minutes or until internal temperature is 160.
