Sweet potato cakes
Delicious potato and sweet potato patties are a tasty side dish, nice vegetarian entree or a versatile appetizer base.

Ingredients

russet potatoes
peeled, cut into quarters

sweet potatoes
peeled, cut into quarters

cup
bread crumbs

cup
mayonnaise
1/2
cup
milk

tbsp.
chives
chopped
1/2
tsp.
garlic powder

tbsp.
dried dill

tsp.
black pepper

tbsp.
capers
minced
Instructions
Place potatoes and sweet potatoes into separate saucepans, cover with water and bring to a boil. Lower heat to simmer and simmer until tender. Drain well.
Run potatoes through a ricer or mash. Add remaining ingredients and mix well.
