This is amazingly good.  Delicious as an accompaniment on a cheese board, excellent on sandwiches and a great go-with for roast meats or fish.  Stir it into a humdrum vegetable dip to elevate that dip to heavenly..


Caramelized Onion Jam

Servings 2 cups

  1. Heat olive oil in pan until hot, then add onions. Cook over medium heat for about 15 minutes. Stir occasionally.
  2. Add the sugars, vinegar, salt and pepper, lower heat and continue cooking about 30 minutes more, or until the onions are caramelized and the mixture is thick and jam like.
  3. Remove from heat. Keeps in the fridge for a few days. This will thicken as it cools, so bring to room temperature before using.
