- 4 tbsp. olive oil
- 4 cups sweet onions very thinly sliced
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 tsp. salt
- 1 tsp. black pepper
- 3/4 cup balsamic vinegar

Instructions
- Heat olive oil in pan until hot, then add onions. Cook over medium heat for about 15 minutes. Stir occasionally.
- Add the sugars, vinegar, salt and pepper, lower heat and continue cooking about 30 minutes more, or until the onions are caramelized and the mixture is thick and jam like.
- Remove from heat. Keeps in the fridge for a few days. This will thicken as it cools, so bring to room temperature before using.
