Instructions
- Make the crumb topping: In medium bowl, combine 1/3 cup brown sugar and tbsp. white sugar, cinnamon and melted butter. Stir in the 2/3 cup flour and combine until crumbly. Set aside.
- Preheat the oven to 425. Fill muffin tin with paper liners or spray with cooking spray.
- Whisk flour, baking soda, baking powder, salt and 1 tsp. cinnamon together and set aside.
- Make the muffins: Beat the 1/2 cup butter, 1/2 cup brown sugar and 1/4 cup white sugar until smooth and creamy, about two minutes, scraping sides as needed. Add the eggs, yogurt and 2 tsp. vanilla. Beat on medium speed for one minute, then on high until it is all combined.
- Add dry ingredients to wet and combine. Add the milk and apples, mixing well.
- Spoon batter into the muffin cups, filling to top. Press a handful of the crumb topping onto the top of each.
- Bake for 5 minutes at 425, then lower the oven temperature to 350 and bake for abut 15 more minutes, or until toothpick inserted into center comes out clean. Remove from oven.
- Make the glaze: Whisk confectioners sugar, cream and vanilla together and drizzle over the top of the warm muffins.
